Extra Virgin Olive Oils
Los Villares® extra virgin olive oils are produced from olives grown on the Moreno family's La Valeriana Estate, near Cordoba, Andalucia. This lovely, old family compound includes thousands of olive trees with some of Spain's most flavorful varietals: Arbequina, Hiojiblanca, and Picual. Los Villares olives are picked early in the season when fruit is very firm, under-ripe, and most flavorful. The first, cold-press process assures maximum flavor. And each olive varietal has its own distinctive flavor.
Arbequina: Light and fruity, with a soft, distinctive finish
Hiojiblanca: Bold and fruity, with a long lasting fruity finish
Picual: Bold and strong with a slight (but friendly) bitter finish
Hiojiblanca/Picual blend: Delicious combination of Fruity and bold olives, in one extra virgin. A most versatile, every day extra virgin olive oil.
Spanish Sweet Wine Vinegars
Unlike Italian balsamics, these sweet vinegars have no grape must added. They are made directly form the sweet wines themselves. Consistency is light. The sweet, fruit flavor is perfect for drizzling on all salads, grilled seafoods, and in recipes homemade mayonnaise, tartar sauce, and other cold, and warm sauces. Produced in a small village near Cordoba, these delightful vinegars are made from two sweet Spanish wines:
Moscatel: The amber color and natural sweet flavor provides a long, sweet, fruity finish. Ideal for salads and all delicate dishes.
Pedro Ximenez: The black, sweet vinegar is made form Spain's famous Pedro Ximenez (pronounced pedro-zimenez) dessert wine.
Aged Sherry Vinegars
The classic, nutty flavor of sherry comes from Spain's famous palomino grape, grown and harvested in the south. From Spain's excellent Sherries, sherry vinegar is produced. In the cool aging cellars of Jerez de la Frontera "home to all famous-branded Sherries" the same rich, round flavor is achieved when making sherry vinegar.
Los Villares® sherry vinegars are made in three quality levels:

Riserva 30: Following Spain's Solera method of aging, small amounts of aged vinegars are moved from larger barrels to smaller ones. The last of the barrels in this series contains 50 year old sherry vinegar. And, some barrels contain 30 year old vinegar. These are rare sherry vinegars. Riserva 30 has the rich flavor of sherry combined with the round, aged flavor provided by barrels of various woods. Riserva 30 is the chef's preferred sherry vinegar because the rich aged flavor can be used in countless recipes, from dressings to drizzles.
Riserva 50: Even rarer than Riserva 30, Riserva 50 is smooth and rich. A few drops on grilled meats, fish, and seafood impart an incomparable, rich sherry flavor.
